Tasks of a Chef de Rang

Guest service

• Welcoming, seating and saying goodbye to guests
• Personal advice on food and drink selection
• Recommendation of wines or food recommendations
• Complaint management (friendly, professional response to complaints)

Organizing service procedures

• Responsibility for your own service room (the so-called rank)
• Coordination of processes in your own rank
• Checking cleanliness, mise en place and tidiness
• Preparation and follow-up of the service

Taking & serving orders

• Taking orders professionally
• Entering orders into the cash register system
• Serving food and drinks according to established service standards
• Clearing and setting the table between courses

Team management & training

• Guidance and support of Commis de Rang (subordinate service staff)
• Induction of new employees in the service area

Accounting & cash management

• Checking the bills
• Collection from guests
• Billing at the end of the shift

Communication & interface with the kitchen

• Close coordination with the kitchen
• Passing on special requests or allergy information
• Ensuring a smooth flow of service

Sales promotion

• Active upselling (e.g. special wines, digestifs)
• Creating a positive guest experience to retain regular customers
