Description
Your to-do list and your responsibilities:
Head of the Food Division
- Identifying developments and trends
- Creating menus & menu development
- Food procurement and negotiations
- Menu Development
Compliance with Allergen Regulations
Management of all kitchen areas
- Monitoring of the restaurant’s standard kitchen procedures before and during service
- Workflow Optimization
- Monitoring portion sizes, mise en place, equipment and its use, workstation cleanliness, and proper use of ingredients
- Double-checking preparations in the individual sub-areas
- Daily briefings with staff
Coordinating between the kitchens (we have a total of three kitchens)
Staff management
- Recruiting
- Creating and coordinating shift schedules for all kitchen areas (in consultation with the respective department managers)
- Instruction, supervision, and training of kitchen staff
- Mediating in the event of problems and challenges
- Performance reviews
- Ensuring compliance with training and working hour regulations for trainees and interns, as well as other applicable laws
- Employee performance reviews
- Mentor
- Member of the strategy team
- Responsibility for QUSH (Quality, Environment, Safety, and Hygiene)
Requirements
Your Profile
- Completed vocational training and several years of professional experience as a head chef
- German as a native language or good English skills
- Enjoy working with people
- Willingness to learn
- Quick learner
- Good self-organization skills and a precise, structured approach to work
- Flexibility, resilience, and the ability to work well in a team
- Commitment to personal growth
