Description
Your to-do list and responsibilities:
Head of Food
- Identifying developments and trends
- Creating menus & menu development
- Food purchasing & negotiations
- Menu development
Compliance with Allergen Regulations
Management of all kitchen areas
- Monitoring of standard kitchen procedures before and during service
- Workflow optimization
- Monitoring portion sizes, mise en place, equipment and its use, station cleanliness, and proper use of ingredients
- Double-checking preparations in the individual sections
- Daily briefings with staff
Coordination between kitchens
Staff management
- Recruiting
- Creation & coordination of shift schedules for all kitchen areas (in consultation with the respective department heads)
- Instruction, supervision, and training of kitchen staff
- Mediation in the event of problems and challenges
- Employee performance reviews
- Compliance with training and working time regulations for trainees/interns as well as other laws
- Employee reviews
- Mentor
- Member of the strategy team
- Safety/Trust Officer
- Responsibility for QUSH (Quality, Environment, Safety, and Hygiene)
Requirements
Your Profile
- Completed vocational training and several years of professional experience as a chef
- Native German speaker or strong English skills
- Enjoy working with people
- Willingness to learn
- Quick learner
- Good self-organization skills and a precise, structured approach to work
- Flexibility, resilience, and the ability to work well in a team
- Commitment to personal development
- Language skills
