Description
Your Role as Sous Chef
You’ll be our head chef’s right-hand person—a leader who’s also right in the thick of the daily kitchen action. Together with our kitchen team, you’ll ensure that quality, flavor, and smooth operations come together every day.
You’ll support our head chef in organizing and managing the kitchen and take responsibility for day-to-day operations. During service, you’ll keep an eye on everything, coordinate workflows, and support your team wherever you’re needed.
It’s not just about putting dishes on plates. You’ll ensure that our culinary philosophy and quality standards are consistently upheld and contribute your own ideas to the development and optimization of our menu. Vegan cuisine is a natural part of what we do —so relevant experience and an interest in modern, versatile cuisine are particularly important to us.
You’ll also contribute your insights behind the scenes: You’ll assist with purchasing, inventory management, cost calculations, and cost of goods sold, and—together with the head chef—ensure that operational efficiency and high quality go hand in hand.
In the head chef’s absence, you’ll take charge of the kitchen team and ensure that processes, quality, and teamwork run smoothly.

Your Responsibilities
- Assisting and standing in for the head chef in the day-to-day management of the kitchen
- Coordinating and ensuring that daily operations and service run smoothly
- Providing professional guidance and support to the kitchen team
- Assuming leadership responsibilities in the head chef’s absence
- Ensuring adherence to our culinary philosophy and quality standards
- Actively participating in daily kitchen operations
- Contributing to the development and optimization of our menu
- Contributing your own ideas and insights to the further development of our culinary offerings
- Assisting with purchasing, inventory management, cost calculation, and food cost control
- Sharing responsibility for the mindful and economical use of food
- Monitoring and ensuring compliance with HACCP hygiene and quality standards
- Promoting a respectful, professional working environment within the kitchen team
- Working closely with the head chef and other departments at the Forsthofalm
What You Bring to the Table
You’re a passionate cook who not only wants to work at the stove but also take on responsibility and support and develop a team.
- Completed culinary training
- Several years of professional experience in the kitchen, ideally as a chef de partie, sous chef, or in a comparable position of responsibility
- Experience in coaching or leading staff is a plus
- Experience in vegan cuisine
- Strong knowledge of food science, kitchen organization, and professional kitchen operations
- Understanding of cost-effective operations, cost calculations, and food cost management
- Proficiency in HACCP and hygiene standards
- Experience with sustainable and regional cuisine is a plus
- Passion for quality, flavor, and modern cuisine
- A structured, reliable, and self-directed approach to work
- Ability to handle pressure and maintain a clear overview even during busy service periods
- Respectful and clear communication
- Team spirit and a willingness to roll up your sleeves and pitch in
- Openness to new ideas and a passion for further developing our cuisine together
